Le Coq d'Or (The Golden Rooster)

  1. Chill a coupe glass.
  2. Add brown sugar to a shaker and muddle gently.
  3. Add brown sugar, pineapple juice, pink grapefruit juice to the shaker and stir to dissolve.
  4. Add brandy, Galliano liqueur, egg yolk, creole bitters, pimento bitters, orange bitters and ice, then shake until well chilled (about 10–15 seconds).
  5. Double strain into the chilled glass.
  6. Garnish with a grapefruit peel twist and a star anise.
