Ingredients

3/4 ozWhite rum
1/2 ozPort
3/4 ozDry vermouth
1/2 ozLemon juice
3 piecePineapple
1/2 ozSimple syrup (2:1)
0.5Egg white
2 dashAngostura bitters

Instructions

  1. Chill a coupe glass.
  2. Muddle pineapple in base of shaker and add other ingredients.
  3. Dry shake (without ice) to start emulsifying (about 10-15 seconds).
  4. Add ice and shake until well chilled (about 10-15 seconds).
  5. Strain into the chilled glass.
