Ingredients

1 1/2 ozWhite rum
1 ozLemon juice
1/2 ozGold rum
1/2 ozSimple syrup (2:1)
0.5Egg white

Instructions

  1. Chill an old-fashioned glass.
  2. Add all ingredients except gold rum to a shaker.
  3. Dry shake (without ice) to start emulsifying (about 10-15 seconds).
  4. Add ice and shake until well chilled (about 10-15 seconds).
  5. Double strain over fresh ice into the chilled glass.
  6. Float gold rum on top.
  7. Garnish with a lemon peel twist.
