  1. Chill a flute glass.
  2. Add all ingredients except the sparkling wine to a shaker.
  3. Add ice and shake until well chilled (about 10–15 seconds).
  4. Strain into the chilled glass.
  5. Top with sparkling wine.
  6. Garnish with a lemon peel twist and a pear slice.
