Ingredients

1 1/2 ozGin (celery infused)
1/2 ozCelery saccharum
1/4 ozGénépi liqueur
3/4 ozLime juice
0.5Egg white
1 dashCelery bitters

Instructions

  1. Chill an old-fashioned glass.
  2. Add all ingredients to a shaker.
  3. Dry shake (without ice) to start emulsifying (about 10-15 seconds).
  4. Add ice and shake until well chilled (about 10-15 seconds).
  5. Fine strain over fresh ice into the prepared glass.
  6. Garnish with a lime peel twist, celery stick, and a celery salt.
