1/2 ozCelery saccharum
1/4 ozGénépi liqueur
3/4 ozLime juice
0.5Egg white
1 dashCelery bitters
Instructions
- Chill an old-fashioned glass.
- Add all ingredients to a shaker.
- Dry shake (without ice) to start emulsifying (about 10-15 seconds).
- Add ice and shake until well chilled (about 10-15 seconds).
- Fine strain over fresh ice into the prepared glass.
- Garnish with a lime peel twist, celery stick, and a celery salt.
