1 1/4 ozNew make spirit
1 1/4 ozPink grapefruit juice
3/4 ozAperol
1/4 ozLime juice
0.5Egg white
1 1/2 ozSparkling wine
Instructions
- Fill a highball glass with ice.
- Add all ingredients except the sparkling wine to a shaker.
- Dry shake (without ice) to start emulsifying (about 10-15 seconds).
- Add ice and shake until well chilled (about 10-15 seconds).
- Double strain into the prepared glass.
- Top with sparkling wine.
- Garnish with a creole bitters.
