1 barspoonPedro Ximénez sherry
1/2 ozChilled water
1 barspoonParfait amour liqueur
1 barspoonSimple syrup (2:1)
1 dashAngostura bitters
to topSparkling wine
Instructions
- Chill a flute glass.
- Add all ingredients to a shaker.
- Dry shake (without ice) to start emulsifying (about 10-15 seconds).
- Add ice and shake until well chilled (about 10-15 seconds).
- Double strain into the chilled glass.
- Top with sparkling wine and stir gently.
- Garnish with a mint sprig and grated nutmeg.
