
About the Bellini cocktail
The Bellini is a classic sparkling cocktail made with Prosecco and peach purée, traditionally white peach. It is light, bright, and delicate, with soft fruit sweetness from the peach and a crisp, bubbly finish from the sparkling wine.
The drink was created at Harry’s Bar in Venice by Giuseppe Cipriani sometime between the 1930s and 1940s. Its soft pink color reminded Cipriani of the work of Giovanni Bellini, the 15th-century Venetian painter, which gave the cocktail its name. Originally a seasonal specialty when fresh peaches were available, the Bellini later became a year-round favorite once peach purée could be preserved and shipped.
