Ingredients

1 ozBrandy
3/4 ozPeach liqueur
1 ozLemon juice
1/4 ozSimple syrup (2:1)
to topSparkling wine

Instructions

  1. Chill a collins glass.
  2. Add all ingredients except the sparkling wine to a shaker.
  3. Add ice and shake until well chilled (about 10–15 seconds).
  4. Strain over fresh ice into the chilled glass.
  5. Top with sparkling wine and stir gently.
  6. Garnish with a peach slice and a mint sprig.
