2 1/2 ozGold rum
2 sliceFresh ginger
3/4 ozLime juice
1/4 ozSimple syrup (2:1)
2 barspoonsHoney
to topGinger ale
Instructions
- Chill a collins glass.
- Muddle the fresh ginger gently in the base of a shaker.
- Add simple syrup (2:1), honey, lime juice to a shaker and stir to dissolve.
- Add gold rum and ice, then shake until well chilled (about 10–15 seconds).
- Double strain over fresh ice into the chilled glass.
- Top with ginger ale and stir gently.
- Garnish with a lime wedge.
