About the Clover Club cocktail

The Clover Club is a classic gin sour made with gin, lemon juice, raspberry syrup, and egg white. It is bright, silky, tart, and lightly fruity, with the raspberry adding color and gentle berry sweetness while the egg white gives the drink its smooth, foamy texture.

The cocktail was created around the early 1900s and named after the Clover Club, a prestigious men’s club in Philadelphia. It rose quickly as a fashionable drink among high society before falling out of favor and spending much of the 20th century in obscurity. After the modern cocktail revival, and especially after the opening of Brooklyn’s Clover Club bar in 2008, the drink returned as one of the great revived classics.

Ingredients

1 1/2 ozGin
1/2 ozLemon juice
1/2 ozRaspberry syrup
2 dropEgg white

Instructions

  1. Chill a coupe glass.
  2. Add all ingredients to a shaker.
  3. Dry shake (without ice) to start emulsifying (about 10-15 seconds).
  4. Add ice and shake until well chilled (about 10-15 seconds).
  5. Double strain into the chilled glass.
