  1. Chill a coupe glass.
  2. Muddle the fennel seeds gently in the base of a shaker.
  3. Add simple syrup (2:1), lime juice to a shaker and stir to dissolve.
  4. Add all remaining ingredients and ice, then shake until well chilled (about 10–15 seconds).
  5. Double strain into the chilled glass.
  6. Garnish with a cocoa powder rim.
