The Paloma is Mexico’s national cocktail, made with tequila, grapefruit soda, lime, and a pinch of salt. It is refreshing, easy to build in the glass, and a real rival to the Margarita: bright citrus, a little sweetness, and a clean tequila backbone.
Grapefruit soda is the key ingredient, whether Jarritos, Fever-Tree, Fresca, or another cane-sugar soda. A sprinkle of salt ties the tequila and grapefruit together, making the Paloma one of the simplest and most satisfying highballs in the classic canon.
