1. Chill a coupe glass.
2. Add green grapes to a shaker and muddle gently.
3. Add all ingredients except the sparkling wine to the shaker.
4. Add ice and shake until well chilled (about 10–15 seconds).
5. Double strain into the prepared glass.
6. Top with sparkling wine and stir gently.
7. Garnish with a lemon peel twist.
