About the Absinthe Cooler cocktail

The Absinthe Cooler is a refreshing absinthe highball built around the spirit’s bold anise, fennel, and licorice-like flavor. It takes an intense love-it-or-hate-it ingredient and stretches it into something lighter, colder, and more approachable for warm weather drinking.

Absinthe has one of the most notorious reputations in spirits history, once blamed for dangerous hallucinogenic effects and banned in the United States and much of Europe by the early 1900s. Those claims were later shown to be greatly exaggerated, and absinthe eventually returned to modern bars. In a cooler-style cocktail, its powerful herbal character becomes crisp, aromatic, and surprisingly refreshing.

  1. Chill a collins glass.
  2. Add all ingredients except the ginger ale to a shaker.
  3. Add ice and shake until well chilled (about 10–15 seconds).
  4. Strain over fresh ice into the chilled glass.
