With a name like Ding-A-Ling, you might expect something frivolous. But this drink has other plans. Mezcal and dark rum form an unlikely split base, amaretto brings a rich almond sweetness, and lemon cuts through the middle. It is something of a fusion cocktail: agave smoke, dark molasses, Italian liqueur, and fresh citrus all meeting in one small glass. None of them are known for being shy.

The first sip lands with a punch. Smoke and dark rum arrive almost together, carrying roasted sugar, spice, and plenty of weight. Amaretto makes the opening feel broader and richer rather than simply sweet. This is not a drink for the faint of heart, but bold does not mean careless. That small measure of lemon provides the spark of brightness needed to keep everything moving.
Then the Ding-A-Ling eases back. Once the initial smoke settles, the flavors begin to separate: almond, dark caramel, fruit, citrus, and the earthy character of the mezcal. As it flows across the palette, it may lean toward rum, then pivot back towards the agave. It is balanced, but balance here does not mean quiet. It means every loud voice gets its turn.

This is a cocktail to serve very cold and explore slowly. It punches hard, steps back, and invites you to return with a better idea of what to look for. The name may ring like a joke, but the drink itself is complex, satisfying, and unusually serious.
