  1. Chill a martini glass.
  2. Add lemongrass stem to a shaker and muddle gently.
  3. Add honey, apple juice to the shaker and stir to dissolve.
  4. Add gin, dry vermouth, chilled water, fresh ginger, lemongrass stem and ice, then shake until well chilled (about 10–15 seconds).
  5. Double strain into the chilled glass.
  6. Garnish with an apple slice.
