Bee's Knees

Bee's Knees

About the Bee’s Knees cocktail

The Bee’s Knees is a classic gin cocktail made with gin, lemon juice, and honey syrup. It is bright, fresh, and floral, with the same crisp citrus structure as a Gin Sour but a smoother, rounder sweetness from the honey.

The drink is often associated with Prohibition-era cocktail culture, with the popular story that honey and lemon helped disguise rough bathtub gin. That origin story may be oversimplified, especially since the drink appears to have been documented outside the United States as well, but the Bee’s Knees has endured because it is more than a cover-up: it is a simple, elegant gin sour with a soft floral finish.
