The Aviation is a classic gin cocktail made with gin, maraschino liqueur, crème de violette, and lemon juice. It drinks like a bright, tart gin sour, with dry cherry-almond notes from the maraschino and just enough violet liqueur to add a delicate floral aroma without making the cocktail taste perfumed.
The cocktail dates back to the early 1900s and is often associated with New York City’s Hotel Wallick. The Aviation nearly disappeared for decades when crème de violette became difficult to find, but its return to the U.S. market helped bring the drink back into modern cocktail culture. Today, it remains one of the most recognizable floral gin classics.
